This week has been one of those week where I wasn’t organized and am paying for it. One of those weeks where I didn’t plan our food for the week, so our choices were not the best. Bad choices usually mean lots of simple carbs that rush into our bodies and give us a quick energy burst only to have us crashing and searching the house for another quick pick me up. This week that ended up being mint chocolate girl guide cookies and Lindor chocolates that were “hidden” in the freezer. Did I also mention I am gluten intolerant? A few cookies every few months is ok for my system, but not 3 cookies 3-4 days in a row.

My system crashed! It started 3 days ago when I managed to wake up for my morning workout. I got downstairs and sat there. Seriously that’s all I did. My brain was foggy and I couldn’t motivate myself to move. I felt like I was moving through a fog. I still managed to have more chocolate and cookies that day. Yesterday I stayed in bed. I felt like I was now trying to move my body through web cement. I had a meeting midday and my husband met me after to have a little date. A treat we can now do with the boys in school. I couldn’t think to talk to him. We ate and I had to go home to nap before picking the boys up. It was crazy! Gluten and bad eating really do a number to my system.

I knew I had to stop! This was crazy! I wasn’t prepared with groceries and the fridge was bare. It was time to go and grab one of my old favorites. One that is so packed with vitamins and minerals, protein and good fats to fuel my body and brain and bring me back to life. Oh, and did I mention it’s delicious, super quick and easy to make and I usually have everything on hand needed to make it!

Another thing I love about this recipe is how much it satiates me. Good fats mixed with protein is an amazing combination for helping you stay full longer. Add in some carbs and your energy goes up. A perfect combination.

Mediterranean Chickpea Salad

1 can chick peas drained and rinsed
6 – 8 sun dried tomatoes diced into small pieces
6 olives pitted and diced
1 garlic clove chopped
1 tomato seeded and chopped
1/8 cup of chives chopped
2 tbsp. feta cheese
1 tbsp. Extra virgin olive oil
1 tbsp. balsamic vinegar

1. In a small bowl whisk together, olive oil and balsamic vinegar. Set aside.
2. In a larger bowl combine all ingredients except the feta cheese.
3. Add in the oil and vinegar dressing.
4. Let sit in fridge at least an hour so the flavours can combine.
5. Add feta before serving.
